Another Whole 30 week in the bag! I’m at the point where I really don’t have to think about what I’m doing and what I’m eating. I went out a few times and easily found menu items that I could slightly modify to be Whole 30 compliant (Cobb Salad, no bacon, cheese, beans or dressing). And the recipes in the Whole 30 cookbook continue to inspire, satiate and make my mouth water! That’s Thai Coconut Soup above (similar recipe), and it was ridiculously easy – I used leftover chicken from the roasted chicken the night before, and chicken stock I made last month that I froze. I’ve never had an easier time dealing with leftovers than I have since starting this food journey.
That there above was probably the best breakfast I will ever make. I used leftover delicata squash (warmed), layered on a couple of slices of proscuitto, a poached egg and mixed some basil & parsley into my homemade mayonnaise for an extra oomph, and served it with a side of sliced avocado. This was crazy amazing.
Another favorite I had this week was Sweet Potato soup, from the Whole 30 cookbook. I also had it for breakfast the next morning and added some Superfood Granola that I made the night before. The granola is a delicious snack as well, but I will be modifying it next time I made it as I thought it was too sweet!
Week 2 Observations:
- I broke the habit of snacking! I was amazed that I made it between meals without feeling hungry.
- I do have a strange sort of craving after I finish eating – I’m not sure what it is, but I’ve been drinking some peppermint tea when it hits and that is helping curb and redirect me.
- The hardest thing has been not weighing myself. It’s killing me. But, obviously, that is a bad habit that needs to be broken, so I’m fighting the urge (and have put away the scale).
- I am sleeping so. well.
- My workouts are strong, I don’t fatigue as early, and I’m not exhausted after (at 7 am, mind you. not a good time to be exhausted after a workout!).
In other news: I updated the header logo – I like this so much better! And, I started a Driving to Mojave dedicated Instagram! Pretty things galore! What do you think?
